Cranberry Sauce Bread
- 3 c. flour
- 1 tsp. baking soda
- 1 tsp. baking powder
- 1/2 tsp. salt
- 2 eggs
- 3/4 c. sugar
- 1 can whole berry cranberry sauce
- 1/4 c. melted butter or margarine
- 3/4 c. orange juice
- 1/2 c. chopped pecans
- 3 Tbsp. orange rind (optional)
- Sift together dry ingredients.
- In mixing bowl, beat together eggs, sugar and cranberry sauce until well blended.
- Stir in melted butter and orange juice.
- Stir in flour mixture until just moistened.
- Fold in nuts and orange rind.
- Do not overbeat. Spread into greased loaf pan and bake in 350u0b0
- oven for 55 to 60 minutes, or in 5 (3 x 6-inch) tiny loaf pans for 40 minutes.
- Let stand about 15 minutes and turn loaves out onto wire rack to finish cooling.
- Store in refrigerator or freezer.
