Chewy Banana-Mini Chip Oatmeal Cookies
- 1/2 cups All-purpose Flour
- 1/2 cups Whole Wheat Flour
- 1 teaspoon Baking Powder
- 1/2 teaspoons Baking Soda
- 1/2 teaspoons Salt
- 2 Tablespoons Butter, Softened
- 1/4 cups Sugar Substitute
- 1/4 cups Sugar
- 1/2 cups Brown Sugar
- 1 Egg (large)
- 1/3 cups Ripe Banana, Mashed
- 1/2 teaspoons Vanilla Extract
- 2 cups Quick Oats
- 1/4 cups Mini Chocolate Chips
- 1. Preheat oven to 350u0b0F.
- 2. In a medium bowl, stir together flours, baking powder, baking soda, and salt.
- 3. In a separate bowl, cream together butter and sugars. Add in egg and beat until light and creamy. Mix in banana and vanilla.
- 4. By hand, stir in banana mixture into flour mixture until well-combined. Stir in oats and mini-chips.
- 5. Drop by heaping tablespoonfuls onto greased cookie sheet. Bake for 8-10 minutes or until edges begin to brown. Do not overbake.
- 6. Remove to wire rack and cool. Store in an airtight container.
