Cheesy Chipotle Breakfast Burritos
- Olive Oil
- 1 whole Large Red Potato, Chopped
- 1/4 whole Red Onion, Chopped
- 2 whole Chicken Sausages, Chopped
- 1 whole Chipotle In Adobo, Chopped
- 4 whole Eggs
- 1/4 cups Pepper Jack Cheese, Grated
- 2 whole Medium Flour Tortillas
- 2 ounces, weight Goat Cheese
- 2 whole Green Onions, Chopped
- Salsa, As Desired
- Heat oil in a frying pan over medium heat.
- Add potatoes, red onion, and sausage and cook until potatoes soften and sausage is cooked all the way through, about 5-6 minutes. Mix in chipotle pepper.
- In a small bowl, scramble eggs and then add to frying pan, stirring constantly to incorporate. Once the eggs are cooked, top with pepper jack cheese.
- Warm tortillas and then assemble by spreading half of the goat cheese and the egg/sausage/potato mixture. Top with green onions and salsa, then roll to form burrito.
