Fresh Veggie Salad With Feta
- 1-1/2 pint Grape Tomatoes, Halved
- 1/2 cups Very Thinly Sliced Red Onion
- 1 Yellow Bell Pepper, Sliced
- 1-1/2 Cucumbers
- 10 ounces, weight Feta, Chunk Not Crumbled
- 1/4 cups Fresh Parsley, Chopped
- 1/2 cups Basil, Julienned
- 1/4 cups White Wine Vinegar
- 6 Tablespoons Olive Oil
- 1/2 Tablespoons Kosher Salt
- 1/2 teaspoons Freshly Ground Pepper
- Halve tomatoes, slice red onion, slice yellow pepper. Halve the cucumbers, scoop out the seeds and slice into big pieces. Dice the feta into chunks. Chop parsley and julienne the basil. Mix the vinegar, olive oil, salt and pepper in a small bowl to make the vinaigrette.
- Combine all ingredients in a large bowl. Toss to combine. Add more olive oil and vinegar if it's a little dry to you. Serve at room temperature.
