Cherry Spice Cake
- 2 c. sugar
- 3/4 c. butter
- 3 eggs
- 3 c. flour
- 1 tsp. salt
- 1/2 tsp. cinnamon
- 1/2 tsp. cloves
- 1/2 tsp. allspice
- 3/4 c. buttermilk
- 1 heaping tsp. baking soda
- 1 c. applesauce
- 1 c. drained, chopped maraschino cherries
- 1 c. chopped pecans
- Preheat oven to 325u0b0.
- Grease and flour three round cake pans. Cream together the sugar and butter.
- Add the eggs and beat well. Sift together the flour, salt, cinnamon, cloves and allspice.
- Mix the buttermilk and baking soda.
- Alternately add the dry mixture and the buttermilk mixture to the creamed mixture.
- Mix well.
- Fold in the applesauce, cherries and pecans.
- Pour the batter into the prepared pans and bake 35 to 40 minutes, or until done.
- Cool before frosting.
