Fruit Pizza
- FOR THE CRUST:
- 1-1/2 cup Flour
- 1/2 cups Powered Sugar
- 1 pinch Salt
- 3/4 cups Butter
- 1 teaspoon Vanilla
- FOR THE CREAM CHEESE MIXTURE:
- 8 ounces, weight Cream Cheese, Room Temperature
- 1/4 cups Powdered Sugar
- 1 teaspoon Vanilla
- FOR THE FRUIT TOPPING:
- 20 ounces, weight Canned Pineapple Chunks, Drain And Reserve Juice
- 11 ounces, weight Canned Mandarin Oranges, Drain And Reserve Juice
- 2 pints Strawberries, Washed, Hulled And Cut In Half
- 2 pints Blackberries, Washed And Dried Well
- 1 Kiwi, Peeled And Sliced
- FOR THE GLAZE:
- 1 cup Reserved Fruit Juice
- 2/3 cups Sugar
- 2-1/2 Tablespoons Cornstarch
- 1 teaspoon Lemon Juice
- Heat oven to 350 F.
- In a medium sized bowl mix flour, sugar and salt. Cut in butter and vanilla using a pastry cutter or two knives. Press onto a round pizza sheet or stone (medium to large size pizza pan). Bake 12-15 minutes (cooking time of the crust is approximate so check it as it cooks) or until light brown. Remove from oven, set pan on a rack and allow crust to cool.
- In a medium sized bowl beat together cream cheese, sugar and vanilla. Spread over the cooled crust. Arrange fruit of your choice on top.
- Stir together glaze ingredients in a small saucepan over medium heat. Bring to a boil and cook until thick. Remove pan from heat and allow it to cool, then pour over the pizza. I used a sauce brush to help spread it on the fruit.
- Refrigerate until ready to serve.
