Fruit Pizza

  1. Heat oven to 350 F.
  2. In a medium sized bowl mix flour, sugar and salt. Cut in butter and vanilla using a pastry cutter or two knives. Press onto a round pizza sheet or stone (medium to large size pizza pan). Bake 12-15 minutes (cooking time of the crust is approximate so check it as it cooks) or until light brown. Remove from oven, set pan on a rack and allow crust to cool.
  3. In a medium sized bowl beat together cream cheese, sugar and vanilla. Spread over the cooled crust. Arrange fruit of your choice on top.
  4. Stir together glaze ingredients in a small saucepan over medium heat. Bring to a boil and cook until thick. Remove pan from heat and allow it to cool, then pour over the pizza. I used a sauce brush to help spread it on the fruit.
  5. Refrigerate until ready to serve.
