Fruit Cake(Mrs. Carmichael'S Recipe)
- 1 lb. butter
- 1 1/4 lb. light brown sugar
- 1 lb. flour
- 3 lb. currants
- 4 lb. raisins
- 1/2 lb. citron, chopped
- 1 lb. figs, chopped
- 1/2 lb. either almond, pecan or hickory nut meats
- 2 oranges, grated rind and juice
- 10 eggs, yolks and whites beaten separately
- 1 c. flour for dredging fruit
- 1 c. jelly
- 1 c. strong coffee
- 1 tsp. each: cinnamon, nutmeg and cloves
- 2 tsp. soda
- Clean the fruit.
- Cut up the citron and prepare the oranges. Cream the butter and sugar and add beaten egg yolks, coffee, jelly, flour, spices and soda which have been mixed together.
- Add the fruit which has been dredged in flour.
- Mix all together and fold in the egg whites.
- Put in buttered pans of the desired size and shape and set pans in a large pan of boiling water.
- Cover with a sheet of heavy wrapping paper and bake 3 hours or set the pans in a steamer and steam 3 hours.
