Extremely Addictive Walnut Banana Bread
- 1-1/2 cup Whole Wheat Flour
- 2 teaspoons Baking Powder
- 1 teaspoon Baking Soda
- 1/2 teaspoons Fine Sea Salt
- 3/4 cups Chopped Walnuts, Divided Use
- 3 whole Medium Overripe Bananas, Peeled
- 1/2 cups Pure Maple Syrup
- 1/4 cups Sunflower Oil
- 1/4 cups Unsweetened Almond Milk
- 2 teaspoons Pure Vanilla Extract
- Preheat oven to 350u0b0F.
- In a medium mixing bowl combine the flour, baking powder, baking soda, sea salt and 1/2 cup of the chopped walnuts. In a separate smaller bowl mash the overripe bananas. Add the maple syrup, oil, almond milk and vanilla extract. Whisk until combined and add the banana mixture into the flour mixture. Do not over mix or the loaf will not rise properly.
- Pour batter into a lightly greased or non-stick 9 x 5 loaf pan, sprinkle with remaining 1/4 cup of walnuts and bake 45-50 minutes, until golden brown and a toothpick inserted comes out clean.
