Fudgy Black Bean Brownie Bites

  1. Preheat oven to 350 F. The appliance/bowl you will need today is a food processor. It can be a big fancy one or a cheap little mini one. I haven't tried this recipe with a blender but I don't foresee an issue with using one.
  2. 1. Puree the (rinsed and drained) black beans in the food processor until very smooth. You really don't want any lumps or whole beans hiding in the batter.
  3. 2. Add the cocoa, flour, baking soda, and salt and blend well.
  4. 3. Add the sugar, egg, applesauce, and vanilla and blend again until smooth.
  5. 4. Pour into greased mini muffin pans. I got 31 brownie bites out of this batter. You could use a regular muffin pan or even a small baking dish but remember that the baking time will change.
  6. 5. Bake at 350 F for 7-8 minutes. Every oven is a bit different so keep an eye on them. When your brownies begin to slightly pull away from the side of the pan and have a slightly rounded top that doesn't remain dented when you touch it, then they are done.
  7. So incredibly easy and quick. In less than 30 minutes you could have one of these in front of you.
  8. Recipe makes 31 brownie bites. Serving size is 3 brownie bites at 120 calories.
