Sun-Dried Tomatoes Over Pasta
- 3 oz. sun-dried tomatoes
- 1/2 c. diced ham
- 1/4 c. diced onion
- 1 c. sliced mushrooms
- fresh garlic to taste
- white pepper
- 1 Tbsp. chopped parsley
- 1/2 c. white wine
- 2 Tbsp. olive oil
- 3/4 c. cream or half and half
- 2 Tbsp. chopped black olives
- 1 small box angel hair pasta, cooked according to pkg. directions
- Soak tomatoes in warm water for 45 minutes prior to cooking. Saute onion, mushrooms, garlic and ham in the olive oil until onion is transparent.
- Add white wine and cook until reduced by half.
- Add cream, tomatoes and black olives.
- Bring back to simmer.
- Season with white pepper and salt to taste.
- Pour sauce mix over pasta and garnish with chopped parsley.
- Serves 4.
