Marvelous Mocha Cheesecake
- 1 1/4 c. chocolate cookie crumbs
- 1/4 c. sugar
- 1/4 c. melted butter or margarine
- 1 (8 oz.) cream cheese, softened
- 1 can sweetened condensed milk (Eagle Brand)
- 2/3 c. chocolate syrup
- 2 Tbsp. instant coffee
- 1 tsp. hot water
- 1/2 pt. whipping cream, whipped
- In small bowl, combine crumbs, sugar and margarine or butter. Pat crumbs firmly in 9 x 13-inch baking pan (on bottom and sides of dish).
- Chill.
- In large mixer bowl, beat cheese until fluffy. Add Eagle Brand and chocolate syrup.
- In small bowl, dissolve coffee in water.
- Add to Eagle Brand mixture.
- Mix well.
- Fold in whipped cream.
- Pour into prepared pan.
- Cover.
- Freeze until firm.
- Garnish with additional chocolate crumbs if desired.
