Streusel Topped Chocolate Chip Orange Muffins
- FOR THE MUFFINS:
- 2 cups Flour
- 1 Tablespoon Baking Powder
- 1/2 teaspoons Salt
- 1 cup Mini Chocolate Chips
- 2 whole Eggs
- 1/2 cups Sugar
- 1/2 cups Milk
- 1 Tablespoon Orange Zest
- 1/2 cups Orange Juice
- 1/4 cups Vegetable Oil
- FOR THE TOPPING:
- 1/2 cups Flour
- 1/2 cups Sugar
- 1/3 cups Cold Butter Cubed
- Preheat oven to 400 F. Line a 12 cup muffin tin with liners and set aside.
- In a large bowl, whisk together flour, baking powder and salt. Stir in chocolate chips. Make a well in the center of the cry ingredients and set the bowl aside.
- In a separate large bowl, combine eggs, sugar, milk, orange zest, orange juice and oil. Add egg mixture to the center of the flour bowl. Stir until dry ingredients are just moistened.
- Fill each muffin cup about 1/4 full. Set aside.
- For the streusel topping, combine flour and sugar in a bowl. Add cold butter and blend with a pasty cutter or two forks until mixture resembles coarse meal. Sprinkle the top of each muffin with streusel topping.
- Bake for 18 minutes. Then remove the pan from the oven and let muffins cool in pan for about 5 minutes before removing them.
