Garden Sass With Homemade French Dressing
- FOR THE GARDEN SASS:
- 2 whole Diced Tomatoes
- 3/4 cups Diced Celery
- 1 whole Peeled, Seeded And Diced Large Cucumber
- 1 whole Sweet Green Pepper, Stem And Seeds Removed Then Chopped
- 2 Tablespoons Finely Chopped Onion
- 1 Tablespoon Homemade French Dressing (Recipe Below)
- 1 Tablespoon Cider Vinegar
- Salt And Pepper, to taste
- FOR THE HOMEMADE FRENCH DRESSING:
- 1 teaspoon White Sugar
- 1/2 teaspoons Salt
- 1/2 teaspoons Coarse-Grained Dijon Mustard
- 1/2 teaspoons Sweet Paprika
- 1/8 teaspoons Cayenne
- 1 Tablespoon Fresh Lemon Juice
- 2 Tablespoons White Wine Vinegar
- 1/2 cups Sunflower Oil
- A note: The recipe for homemade French dressing given below has a balance of sweet, sour and spice that complements Garden Sass well.
- How to use Garden Sass: Garden Sass is especially good served over warm wilted greens (as in the related link) or as a fresh relish.
- Making the Garden Sass:
- 1. Mix all the ingredients together in a bowl and chill for 2 hours.
- Making the French dressing:
- 1. Place all the ingredients in a lidded glass jar. Cover it and shake well. If the dressing isn't used right away, shake it up again right before adding it to the Garden Sass.
- An acknowledgement: The Garden Sass recipe is adpated from one in Beth Tartan's "The Good Old Days Cookbook" (1971. The French dressing recipe is based on one in the second printing of the first edition of the "Better Homes and Gardens New Cookbook" (1953).
