Banana-Chocolate Chip Oatmeal Muffins With Walnuts
- 1 cup All-purpose Flour
- 1/2 cups Whole Wheat Flour
- 1/4 cups Flax Meal
- 2/3 cups Brown Sugar
- 1-1/2 teaspoon Baking Powder
- 1/4 teaspoons Baking Soda
- 1/4 teaspoons Salt
- 3/4 cups Regular Oats
- 1 cup Mashed Banana (for 1 Cup You'll Need 2-3 Bananas)
- 1/3 cups Skim Milk
- 1/8 cups Canola Oil
- 1 teaspoon Vanilla
- 2 Large Eggs, Lightly Beaten
- 1/2 cups Dark Chocolate Chips , More Or Less Depending On Taste
- 1/2 cups Walnuts, More Or Less Depending On Taste
- 1. Preheat oven to 350u0b0F. If desired, line a muffin pan with muffin liners. Recipe makes 12 muffins.
- 2. In a large bowl mix all dry ingredients (flour through oats on the above list).
- 3. In a medium-sized bowl mix all wet ingredients (banana through eggs). Add the wet ingredients into the dry ingredients and stir until just moist. Fold in chips and nuts. Divide batter into muffin cups.
- 4. Bake on middle rack of the preheated oven for 10 minutes, then bake on the top rack about 7 to 10 minutes, depending on your oven. When done, the tops should be golden brown and a toothpick inserted in the center of a muffin should come out clean. If muffins were cooked in muffin liners, then let them cool slightly before serving. This allows you to pull the paper off easier.
