Oat And Apple Morning Muffins
- Streusel Topping (recipe follows)
- 1 1/2 c. rolled oats
- 1 1/4 c. all-purpose flour
- 2 tsp. baking powder
- 3/4 tsp. ground cinnamon
- 1/4 tsp. baking soda
- 1/2 c. skim milk or milk
- 1/2 c. packed brown sugar
- 1/4 c. cooking oil
- 1 egg
- 2 c. finely chopped, peeled cooking apples
- 1 c. raisins
- Lightly grease 18 muffin cups or line with paper bake cups; set aside.
- Prepare the Streusel Topping.
- In a mixing bowl, combine the oats, flour, baking powder, cinnamon and baking soda. In another bowl, stir together the milk, sugar, oil and egg.
- Stir in the apples.
- Add to the dry ingredients, stirring just until combined.
- Stir in raisins.
- Fill prepared muffin pan cups with batter.
- Sprinkle Streusel Topping over the muffin batter.
- Bake in a 400u0b0 oven for 15 to 18 minutes, or until done.
- Makes 18 muffins.
