Banana Trifle
- 9 whole Egg Yolks
- 1-1/2 cup Granulated Sugar
- 3/4 cups All-purpose Flour
- 6 cups Milk
- 1 whole Vanilla Bean
- 4-1/2 Tablespoons Unsalted Butter
- 6 whole Bananas, Ripe, Thinly Sliced
- 2 cups Whipping Cream
- 1 Tablespoon Grand Marnier
- 1 package Vanilla Wafer Cookies, 12 Ounce Box
- 1/4 cups Rum
- 2 Tablespoons Orange Peel, Thinly Sliced
- 12 whole Candied Violets
- 1.tefore you start: You will be stirring constantly for about 20 minutes, so be prepared - get yourself a comfortable chair to sit in (I use a bar stool), and a tall cold drink, and turn on the TV - once you start cooking, you cannot walk away until you're done.
- 2.tet a wide strainer over a bowl. Beat the yolks and set aside in a place convenient to the stove.
- 3.thisk the sugar, flour, and milk in a large heavy saucepan until free of lumps. Split the vanilla bean lengthwise, scrape it with the back edge of a paring knife to release the seeds, and add all it to the milk mixture - pod, seeds, and all. Set over medium heat and cook mixture, stirring constantly with a wooden spatula, just to a boil. This takes a while, and the mixture scorches easily, so don't answer the phone or the door.
- 4.temove from heat and whisk a little of the hot, thick pudding into the beaten yolks, then pour the yolk mixture back into the main pudding mixture, whisking really well. Continue to cook and stir over medium heat 1 to 2 minutes more, stirring constantly, until thick.
- 5.temove from heat. Using the strainer that you had set aside, strain the mixture into the bowl. Stir in butter. Cover with plastic wrap (directly on the surface of the pudding to a film doesn't form), and let cool. Refrigerate for 3 hours or overnight.
- 6.then you are ready to assemble the trifle: Cut up bananas.
- 7.thip the cream with a splash of Grand Marnier. Set aside.
- 8.tine a large bowl with 1/3 of a box of Vanilla Wafers. Sprinkle the wafers with 1/3 of the rum.
- 9.tpoon in 1/3 of the vanilla pudding. Arrange 1/2 of the bananas on top. Arrange 1/3 of the Vanilla Wafers on top. Sprinkle wafers with another 1/3 of the rum. Spoon in 1/3 of the vanilla pudding. Arrange 1/2 of the bananas on top. Arrange 1/3 of the vanilla wafers on top. Sprinkle wafers with the remaining rum. Spoon in 1/3 of the vanilla pudding.
- 10.tover with the whipped cream, smooth the top, and decorate with slivers of orange peel, or candied flowers, or something Martha Stewart-ish.
- 11.tefrigerate until ready to serve.
