Gluten Free Hearty Banana Pancakes
- 1 Banana
- 2 Eggs
- 1/2 teaspoons Pure Vanilla
- 2 Tablespoons Coconut Flour
- 2 Tablespoons Flaxseeds
- 1/2 Tablespoons Cinnamon
- 1/2 teaspoons Baking Powder
- First, mash the banana (the riper it is, the sweeter the pancakes will be).
- Add the eggs and vanilla to the banana mixing them together. Add the coconut flour and the flaxseeds. You can use flaxseed meal as well if you want smoother pancakes. I like the seeds because they add a little texture. Finally, mix in the cinnamon and the baking powder. Mix the batter up until you are not able to see the bubbles of coconut flour anymore.
- Heat a larger saucepan up and grease it. Once pan is greased, pour the batter into the saucepan on medium heat. I make one huge pancake but you can make probably 5-6 smaller pancakes from the recipe.
