Apple Crumble Cake
- FOR THE APPLE FILLING:
- 5 whole Granny Smith Apples, Peeled, Cored And Cubed
- 2 Tablespoons Unsalted Butter
- 1/4 cups Brown Sugar
- 2 Tablespoons Maple Syrup
- 1 teaspoon Ground Cinnamon
- FOR THE CAKE:
- 1-1/4 cup Granulated Sugar
- 2-1/4 cups All-purpose Flour
- 1 Tablespoon Baking Powder
- 1 teaspoon Salt
- 2 sticks Unsalted Butter, Cold And Cut Into Cubes
- 1 whole Egg
- 1 Tablespoon Milk
- 1 teaspoon Vanilla Extract
- To prepare the apple filling, put all of the filling ingredients in a skillet. Cook over medium heat for about 10 minutes, stirring occasionally, until the apples are soft. Remove from heat and allow to cool to room temperature.
- Preheat oven to 350 F. Grease a 9-inch cake pan and line the bottom of the pan with parchment paper.
- Mix sugar, flour, baking powder and salt in a food processor. Add butter and process until the mixture resembles coarse meal.
- Spoon out half of the mixture and put it in a bowl. Set aside.
- In a measuring cup, mix egg, milk and vanilla. Pour into the bowl with half of the flour mixture. Stir to combine then pat it into the prepared pan.
- Top with the apple filling. Crumble the remaining dough mixture over the apple layer.
- Bake in preheated oven for 45 to 50 minutes, or until top is slightly brown. Cool completely before serving.
