Miniature Cheesecakes
- 6 Tbsp. butter
- 1 1/2 lb. graham cracker crumbs
- 1/2 lb. dry cottage cheese
- 8 oz. cream cheese
- 1 c. sour cream
- 3/4 c. sugar
- 3 eggs
- 1 tsp. vanilla
- 1 can cherry or blueberry pie filling
- Preheat oven to 350u0b0.
- Melt butter in saucepan.
- Add graham cracker crumbs, tossing to coat well with butter.
- Set aside. Place cottage cheese, sour cream and cream cheese together in mixing bowl.
- Blend with electric mixer.
- Add sugar, then eggs and vanilla.
- Blend with electric mixer or food processor and blend 1 minute.
- Line mini muffin pans with paper liners.
- Place 1 teaspoon of graham cracker crumbs in each liner.
- Press down firmly.
- Fill liners 3/4 full with cheese mixture.
- Bake exactly 12 minutes.
- Let cool, then top each with 1 teaspoon pie filling. Chill until topping sets.
- Makes 4 dozen.
