Black Bean Soup
- 1/2 whole Large Onion, Peeled And Chopped
- 2 whole Sweet Peppers, Stem And Seeds Removed Then Chopped
- 4 cans 14.5 Oz Cans, Black Beans, Undrained
- 3 cups Chicken Stock
- 1 cup Chunky Salsa
- 1-1/2 teaspoon Cumin
- 1-1/2 teaspoon Garlic Salt
- 1 cup Sour Cream
- 2 whole Chopped Green Onions
- Salt And Pepper, to taste
- Yellow Corn Chips, For Serving (optional)
- In a stock pot over medium heat, saute the onion and peppers. Once they are softened, season them with salt and pepper. Add the black beans, the stock, salsa, cumin, and garlic salt. Allow the mixture to simmer for 30 minutes.
- Use an immersion (or hand) blender to process the soup, making it smooth. Simmer for another 5-10 minutes.
- Ladle out into bowls, garnishing with a dollop of sour cream and some chopped green onion. Serve with corn chips.
