Gooey Lemon Cookies
- 1 cup Room Temperature Butter
- 3/4 cups Granulated Sugar
- 3 Tablespoons Lemon Juice (for 3 Tablespoons You'll Need One Lemon)
- 1 Tablespoon Lemon Zest (for 1 Tablespoon You'll Need One Lemon)
- 1 teaspoon Baking Soda
- 1 pinch Salt
- 1-3/4 cup All-purpose Flour
- 1/2 cups Icing Sugar
- Preheat your oven to 350 F and line a baking tray with parchment paper.
- In a large bowl using an electric mixer, cream together butter, granulated sugar, lemon juice and zest. Add the baking soda, salt and flour and combine.
- Roll the dough into your preferred size balls then coat them in icing sugar. Place them on the baking tray leaving about 2 inches between them.
- Bake for 8 -10 minutes. The cookies should look dry on the surface but should not be brown. Remove from oven. Transfer to a cooling rack and leave to set up for 20 minutes. These cookies are very gooey!
