Easy Fritatta

  1. In a large frying pan, fry the bacon. After a few minutes, add the onion and pepper. Saute until tender.
  2. Whip up the eggs with a splash of milk. Add the meat, veggies and 1/2 cup cheese. Pour into a baking dish that has been sprayed with cooking spray and top with additional cheese.
  3. Bake at 350u0b0F for about 30 minutes. When a toothpick inserted in the middle comes out clean, it is done.
  4. Top with salsa if you wish.
  5. Enjoy!
  6. Note: This recipe can be changed easily by switching ham or sausage for the bacon. You can also change the veggies and add mushrooms, broccoli, tomatoes-the possibilities are endless!
