Chocolate Applesauce Muffins

  1. Preheat oven to 350 F. Prepare muffin pans (recipe makes 18 standard-sized muffins) by spraying them with non-stick baking spray or lining with paper liners.
  2. In a large bowl cream together butter and sugar until light in color, about 2 minutes. Add eggs and cocoa powder; mix until smooth. Fold in applesauce. Add remaining dry ingredients and mix just until combined (don't over mix).
  3. Fill cups about 3/4 full with the batter. Bake 22-25 minutes or just until a toothpick inserted in the center comes out with a couple crumbs attached. Cool for 5 minutes before removing muffins from the pan and placing them on a cooling rack to cool completely.
