Greek Quinoa Salad
- FOR THE SALAD:
- 3/4 cups Quinoa
- 1-1/4 cup Water, Plus More To Soak Quinoa
- 1/4 teaspoons Salt, Plus More To Season Salad
- 4 whole Small Cucumbers, Large Diced
- 1-1/2 cup Grape Tomatoes, Halved
- 1 whole Yellow Pepper, Diced
- 1 whole Green Pepper, Diced
- 3/4 cups Feta Cheese, Crumbled
- Pepper To Taste
- FOR THE DRESSING:
- 1/3 cups Olive Oil
- 3 Tablespoons Red Wine Vinegar
- 1 sprig Oregano, Chopped
- Salt And Pepper, to taste
- Soak quinoa in some water for 5 minutes. Drain and rinse. Add quinoa with the water and salt to a small saucepan cover and bring to a boil; reduce heat and simmer for 15 minutes. Let rest for 5 minutes. Fluff with a fork and let cool.
- Meanwhile, mix vegetables together. Shake dressing ingredients in a jar. Mix quinoa with the vegetables and add crumbled feta, additional salt and pepper to taste. Be careful, as feta is salty. Pour dressing over the salad and toss. Adjust seasoning.
- Refrigerate for 1-2 hours and serve.
