Greek Orzo Salad
- 1 box Orzo Pasta (16 Oz. Box)
- 2 jars Marinated Artichoke Hearts, Chopped, Marinade Reserved (6 Oz Jars)
- 2 whole Large Tomatoes, Diced
- 1 whole Large Cucumber, Seeded And Diced
- 1/2 whole Red Onion, Chopped
- 1 cup Crumbled Feta Cheese
- 1 can Sliced Black Olives, Drained (2 Oz. Can)
- 4 teaspoons Dried Parsley Flakes
- 1/2 teaspoons Dried Oregano
- 1/2 teaspoons Lemon Pepper
- 1/2 cups Greek Dressing Of Choice
- 2 Tablespoons Lemon Juice
- 2 Tablespoons Reserved Artichoke Marinade
- 1. Bring a large pot of water to a boil. Add pasta and cook until al dente, according to package directions. Drain and cool.
- 2. In a large bowl, combine pasta with all of the remaining ingredients. Toss and chill in refrigerator for at least 1 hour before serving.
