Greek Pasta Salad With Crab And Feta
- FOR THE SALAD:
- 8 ounces, weight Rotini Pasta
- 2 heads Broccoli, Chopped Into Small Florets
- 1/2 Red Bell Pepper, chopped
- 1/2 Orange Bell Pepper, Chopped
- 2 Small Zucchini, Sliced
- 4 ounces, weight Grape Tomatoes, Halved
- 2 Green Onions, diced
- 8 ounces, weight Imitation Flake Crab, Chopped
- 4 ounces, weight Feta Cheese
- Optional For Garnish: Chopped Green Onions And Feta Cheese Crumbles
- FOR THE DRESSING:
- 1/2 cups Olive Oil
- 1/2 cups Red Wine Vinegar
- 1 teaspoon Garlic Powder
- 1 teaspoon Oregano
- 1 teaspoon Dried Basil
- 3/4 teaspoons Black Pepper
- 3/4 teaspoons Salt
- 3/4 teaspoons Onion Powder
- 3/4 teaspoons Dijon Mustard
- Cook the pasta according to package directions. Drain and rinse with cold water to stop the cooking.
- Throw the pasta, all the veggies, the crab, and the feta cheese together in a large bowl. Toss to combine. Set aside for a moment.
- In a jelly or jam jar, combine all the dressing ingredients. Screw the lid on extra tight and shake for about 2 minutes or until well combined. Pour over the salad ingredients and stir to coat.
- Chill until ready to serve. Sprinkle with additional feta or green onions before serving, if desired.
