Greek Salad
- 4 whole Tomatoes
- 1 whole Lettuce
- 1 whole Bell Pepper
- 10 ounces, weight Feta
- 12 whole Kalamata Olives
- 1 whole Celery
- 1 whole Cucumber
- 1 whole Red Onion
- 1 bunch Coriander Leaves
- 1 bunch Oregano Leaves
- FOR THE DRESSING:
- 2 Tablespoons Lemon Juice
- 1/2 cups Extra Virgin Olive Oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- Wash, chop and combine tomatoes, lettuce, bell pepper, feta, olives, celery, cucumber, red onion, coriander leaves, and oregano leaves in a salad bowl. You can use dried herbs if you prefer, and beware the pitts in the olives!
- In a glass, combine lemon juice, olive oil, salt and pepper. Stir well and pour over the salad. Toss the salad and enjoy.
