Layered Strawberry Cheesecake
- 1 c. graham cracker crumbs
- 2 Tbsp. sugar
- 3 Tbsp. reduced-calorie margarine, melted
- 1/2 c. water
- 4 eggs
- 1 (16 oz.) carton low-fat cottage cheese
- 1/2 c. sugar
- 1/2 c. instant dry milk powder
- 1/4 c. flour
- 1 Tbsp. lemon juice
- 2 tsp. vanilla extract
- 1/8 tsp. salt
- 4 c. fresh strawberries, washed and hulled
- 1 Tbsp. cornstarch
- 1 c. unsweetened orange juice
- Combine cracker crumbs, 2 tablespoons sugar and margarine. Press evenly into bottom of a 9-inch pan.
- Combine water, eggs, cottage cheese, 1/2 cup sugar, dry milk, flour, lemon juice, vanilla and salt in an electric blender.
- Process 1 minute or until smooth.
- Pour into crust.
- Bake at 350u0b0 for 1 hour.
- Turn off heat and leave in oven 1 hour.
- Set aside to cool.
