Cranberry Applesauce Muffins
- 1 cup Cranberries, Chopped (Fresh Or Frozen)
- 1/2 cups Sugar, Plus Optional 2 Tablespoons For The Cranberries
- 1-1/4 cup Applesauce
- 1/4 cups Canola Oil
- 1 whole Egg
- 1 teaspoon Vanilla
- 2 cups Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Cinnamon
- 1/2 teaspoons Salt
- 1/2 cups Pecans, Chopped
- Preheat oven to 350u0b0F. Prepare 12 muffin cups. Combine chopped berries with 2 tablespoons sugar, if desired. Set aside.
- Combine applesauce, oil, egg, and vanilla in a small bowl. In a separate bowl combine flour, remaining 1/2 cup sugar, baking soda, cinnamon and salt. Add applesauce mixture and stir until just combined. Fold in the cranberries and nuts.
- Bake for 15-20 minutes until an inserted tester comes out clean. Cool for a few minutes before removing from the pan.
