Green Beans With Shallots And Pine Nuts
- 1 pound Whole Frozen Green Beans (preferably Haricot Verts)
- 1/2 cups Water
- 1 Tablespoon Vegetable Oil
- 2 whole Shallots, Thinly Sliced
- 3 cloves Garlic, Minced
- 2 Tablespoons Pine Nuts
- Salt And Pepper, to taste
- Rinse and drain green beans. Heat a pan over medium heat and add green beans, lightly cooking them for 4-5 minutes. Add water to the pan to lightly steam the green beans for 4-5 minutes. Once the water has evaporated add the vegetable oil and lightly saute the green beans for 3-4 minutes. Using a spatula spread the green beans to one side of the pan and add the shallots to the other side of the pan. Lightly saute the shallots for 3-4 minutes and then add the garlic, lightly cooking the mixture for 1-2 minutes. Mix shallots and garlic with the green beans and add the pine nuts. Cook 3-4 minutes more or until pine nuts are lightly toasted. Add salt and pepper to taste. Serve hot.
