Brown Sugar Raisin And Walnut Bread
- 2 ounces, weight Raisins
- 2 Tablespoons Warm Water
- 1/2 cups Walnuts, Finely Chopped
- 1/4 cups Brown Sugar
- 1 whole Egg
- 1 cup Buttermilk
- 3 cups All-purpose Flour
- 1/2 cups Whole Wheat Flour
- 1 teaspoon Baking Soda
- Preheat the oven to 425u0b0F.
- Place the raisins in a small bowl. Pour the water over them and let sit for a few minutes. Then pour the raisins and their soaking liquid into a medium bowl. Add the walnuts, brown sugar, and egg. Beat the ingredients together just until the egg has been thoroughly incorporated into the mixture. Whisk in the buttermilk, then stir in the flours and baking soda.
- Using a rubber spatula, mix the flour into the dough completely. Place the dough on a baking sheet covered with parchment paper and form it into a round about 7 inches across.
- Bake at 425u0b0F for about 20 minutes, or until the bread is browned. Reduce the heat to 350u0b0F and bake for an additional 1/2 hour, or until the bread is cooked through and a cake tester inserted in the center comes out cleanly. Let the bread cool completely on a baking rack before slicing. Enjoy!
