Cucumber And Tomato Summer Salad
- 1 whole English Cucumber, Thinly Sliced
- 2 whole Large Tomatoes, Cored And Seeded And Cut Into Bite Size Pieces
- 1/2 whole Small Purple Onion, Peeled And Cut In Half And Thinly Sliced
- 1/3 cups Canola Oil (or Vegetable)
- 3 Tablespoons Red Wine Vinegar
- 3 Tablespoons Sugar
- 3/4 teaspoons Kosher Salt
- 1/4 teaspoons Black Pepper
- 1/4 teaspoons Garlic Powder
- In a medium bowl place the cucumber, tomatoes and onion. In a small jar with a lid, place the oil, red wine vinegar, sugar, kosher salt, black pepper and garlic powder. Shake until well-combined and the sugar is dissolved. Pour over the cucumber mixture and stir gently to coat. Cover and refrigerate for several hours before serving.
