Apple Turtle Cheesecake
- 3/4 c. chocolate graham cracker crumbs
- 1/4 c. sugar
- 1/2 c. finely chopped nuts
- 1/4 c. melted butter
- 3 (8 oz.) pkg. cream cheese
- 1 c. sugar
- 2 eggs
- 2 tsp. vanilla
- 1 c. sour cream
- 2/3 c. sugar
- 1 tsp. cinnamon
- 2 dashes nutmeg
- 2 Tbsp. flour
- 2 c. peeled, sliced apples
- 1/3 c. salted pecans
- 14 caramels + 1 Tbsp. water
- 1/3 c. chocolate chips plus 1 tsp. shortening
- Rollo candies
- Mix crumbs, 1/4 cup sugar and nuts together.
- Stir in butter and blend well.
- Put in 9-inch spring-form pan to form crust.
- Beat cream cheese, 1 cup sugar, eggs, vanilla and sour cream.
- Combine sugar, cinnamon, nutmeg and flour.
- Toss with apples.
- Pour 1/2 cheesecake mixture into crust lined pan.
- Arrange 1/2 apples in concentric circle over cheesecake layer.
- Pour 1/2 the remaining cheese over apples.
- Arrange balance of apples over cheese layer and top with remaining cheese mixture.
- Bake at 350u0b0 for 1 hour. Cool, then refrigerate overnight.
- Arrange nuts on top of cooled cheesecake.
