Chinese Shrimp Salad
- FOR THE SALAD:
- 3 cups Green Cabbage Chopped
- 3 cups Red Cabbage, Chopped
- 1 cup Jicama, Peeled And Diced
- 2 cups Yellow Peaches, Chopped (about 2 Large)
- 1 whole Large Avocado, Chopped, Pit And Peel Removed
- 1/3 cups Green Onion, Chopped
- 1/3 cups Cilantro, Chopped
- 3/4 cups Cooked Bay Shrimp
- 5 whole Wonton Wrappers, Cut Into 1/4 Inch Strips And Lightly Fried
- FOR THE DRESSING:
- 3 Tablespoons Rice Wine Vinegar
- 2 Tablespoons Brown Sugar
- 3 Tablespoons Ponzu Sauce
- 1 teaspoon Sriracha
- 1-1/2 teaspoon Grated Ginger
- 2 teaspoons Sesame Oil
- Add all of the salad ingredients (except the fried wontons) to a bowl, toss to combine. Top with wontons.
- Add all of the dressing ingredients to a bowl, stir to combine. Drizzle over the salad. Serve cold.
