Chicken Fajitas
- 4 oz. canned green chiles
- 1/4 tsp. ground cumin
- 1/4 tsp. dried oregano
- 1/4 tsp. paprika
- 1/4 tsp. chili powder
- 1/4 tsp. sugar
- 2 Tbsp. vegetable oil
- 1 onion, sliced
- 1 red pepper, sliced
- 1 Tbsp. fresh lime juice
- 1/2 tsp. salt
- 1 garlic clove, minced
- 1 Tbsp. minced fresh cilantro
- 1 1/2 lb. boneless chicken, cut into strips
- 1 pkg. flour tortillas
- shredded Cheddar/Monterey Jack
- sour cream
- lettuce
- California black beans
- Combine cumin, oregano, paprika, chili and sugar in a small bowl.
- Heat oil in 12-inch skillet.
- Add onion, pepper, chiles, lime juice and salt.
- Saute slowly for 10 minutes or until vegetables are tender.
- Add garlic and cilantro.
- Saute for 2 minutes.
- Increase heat to high.
- Add chicken and spice to pan and saute until chicken is lightly brown.
- Season to taste with salt. Steam tortillas.
- Roll chicken mixture into tortillas and top with condiments of your choice.
