S’Mores Inspired Chocolate Meringue Pie
- FOR THE CRUST:
- 1-1/2 cup Graham Cracker Crumbs
- 5 Tablespoons Unsalted Butter, melted
- 1/4 cups Brown Sugar
- FOR THE FILLING:
- 10 ounces, weight Semisweet Chocolate, Coarsely Chopped
- 1 cup Heavy Cream
- 1/4 cups Whole Milk
- 1 whole Egg
- 2 Tablespoons Granulated Sugar
- 1/4 teaspoons Salt
- 1/2 teaspoons Cinnamon
- FOR THE TOPPING:
- 3 Egg Whites
- 6 Tablespoons Granulated Sugar
- 6 Tablespoons Marshmallow Cream
- Preheat oven to 300 F.
- Combine graham cracker crumbs in a food processor with butter and brown sugar. Pulse until fully mixed and crumbs are moist.
- Press graham cracker mixture into a pie dish across the bottom and up the sides then place in the refrigerator to set.
- Begin making the filling by placing the chocolate in a heatproof bowl and set the bowl to the side.
- Heat cream and milk in a saucepan over medium heat until they are just about to boil. Pour over chocolate and let it sit for one minute before whisking until smooth.
- Meanwhile whisk the egg, sugar and salt in another bowl then slowly add it into the chocolate mixture, whisking until incorporated. Add cinnamon and combine.
- Pour filling into crust and place in the oven. Bake pie until the edges of the filling are set and the center jiggles slightly, approximately 30-35 minutes. Cool on a wire rack.
- Just before serving (and once filling has cooled), turn broiler on low and make the marshmallow meringue by beating egg whites and sugar in a medium-sized bowl. Add marshmallow cream one tablespoon at a time once the meringue begins to come together. Beat until stiff peaks form.
- Top pie with meringue and place under the broiler until browned, 1-2 minutes. Keep a close eye on it to make sure it doesn't burn.
- Serve and enjoy!
