Snacking Spice Cake
- 1/2 cups Yogurt
- 1/2 cups Canola Oil
- 1/2 cups Milk
- 1 whole Egg
- 1/2 teaspoons Vanilla Extract
- 1 Tablespoon Molasses
- 1 cup Brown Sugar, Plus Two Tablespoons, Divided Use
- 1-1/2 cup All-purpose Flour
- 1-1/2 teaspoon Baking Powder
- 1 teaspoon Salt
- 1 Tablespoon Cocoa Powder
- 1/2 teaspoons Instant Coffee Powder
- 2 teaspoons Ground Cinnamon, Divided Use
- 1/8 teaspoons Ground Allspice
- 1/8 teaspoons Ground Nutmeg
- 1/8 teaspoons Ground Cardamom
- 1/8 teaspoons Ground Ginger
- 1/8 teaspoons Ground Cloves
- Preheat the oven to 400 F.
- Whisk together the yogurt, oil, milk, egg, vanilla and the molasses in a large bowl. Set aside.
- In a medium bowl combine 1 cup of the brown sugar, the flour, baking powder, salt, cocoa powder, coffee powder, one teaspoon of cinnamon, and the other spices.
- Pour the dry ingredients into the wet and stir to combine. Pour the batter into an 8 1/2-inch square baking dish.
- In a small bowl, combine the remaining two tablespoons of brown sugar and the remaining one teaspoon of cinnamon. Sprinkle evenly over the top of the batter.
- Bake for 25 minutes at 400 F, or until the top has browned, then reduce the heat to 350 F and bake for about 10 minutes to finish baking. The cake is done when a cake tester comes out cleanly. Let cool in the pan. Enjoy!
