Nancy’S Oatmeal Jam Cookies
- 2 cups Butter, Softened
- 1-1/2 cup Packed Brown Sugar
- 1/2 cups Sugar
- 4 whole Eggs
- 7 cups Quick Cooking Oats
- 2-1/2 cups Flour
- 1 package (5.1oz) Instant Vanilla Pudding Mix
- 2 teaspoons Baking Soda
- 1 jar (500ml) Raspberry Jam (or Any Fruit Jam)
- In an extra large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the oats, flour, dry pudding mix and baking soda in another bowl and then gradually add to the creamed mixture. Mix well.
- Roll dough into balls and place on lightly greased baking sheets. Using the end of a wooden spoon handle, make a small hole in each cookie. Fill the hole with jam.
- Bake in 375 degrees (F) oven for 12-14 minutes or until golden brown. Remove to wire racks to cool.
- Makes 6 dozen cookies.
