Healthy Energy Chocolate Chip-Banana-Coconut Oatmeal Cookies
- 2 whole Well Ripened Peeled Bananas Fresh Or Frozen
- 1 Tablespoon Pure Vanilla Extract
- 2 Tablespoons Coconut Oil (or Olive Oil)
- 1-1/4 cup Old Fashioned Oats
- 4 Tablespoons Almond Meal Or Wheat Bran
- 1/3 cups Unsweetened Shredded Coconut
- 2 teaspoons Cinnamon
- 1/3 teaspoons Salt
- 2/3 teaspoons Baking Soda
- 1/2 cups Milk Or Semi-sweet Choc Chips Or Carob Chips
- Preheat the oven to 350 F.
- In a bowl, mash the bananas using a fork. To this add vanilla and oil and mix well.
- In another bowl, mix the remaining dry ingredients (oats through baking soda). Add the dry mix to the wet mix and gently mix them together. Fold in the chocolate chip or carob chips. The dough will be kind of loose and sticky.
- Roll the dough into small balls. On a baking sheet lined with a silicone mat or parchment paper, line up the small balls, placing them an inch apart. You can flatten the balls using your hands or you can roll them into your desired shape. The shape doesn't really change while baking so 1" distance between them is fine.
- The original recipe called for 14 minutes baking time or until firm. I found that after 15 minutes mine were still soft so I let them bake for another 15-20 minutes. Make sure they are nice and firm because if they are under cooked they will crumble.
