Brunswick Stew
- 5 lb. dressed chicken, boiled and cut in small pieces
- 2 lb. fresh lean pork
- 2 lb. lean ground beef
- 1 lb. diced onions
- 5 (No. 2) cans tomatoes
- 1/2 pt. bacon grease
- 3 cans corn
- 3 to 4 potatoes
- 3 pkg. frozen lima beans
- 1 Tbsp. oregano
- 5 bay leaves
- 2 Tbsp. sugar
- 3 medium size cans V-8
- 2 pods red pepper
- 1/2 bottle Worcestershire sauce
- Boil chicken in 1 quart water.
- When done, strain stock and add tomatoes, lean pork (diced), lean beef, the cut up chicken, onions, tomatoes, bacon grease and V-8.
- Cook 3 hours.
- Add potatoes and lima beans and cook for 1 hour, then add sugar, corn, bay leaves, oregano, Worcestershire and salt and pepper.
- Cook 30 minutes longer.
- Makes 3 gallons.
