Hearty Cabbage Soup
- 2 Tablespoons Olive Oil
- 1 Onion, Diced
- 2 cloves Garlic, Minced
- 1-1/2 cup Carrot, Chopped
- 14-1/2 ounces, fluid Canned Diced Tomato
- 32 ounces, fluid Beef Broth
- 2 Tablespoons Tomato Paste
- 3 Potatoes, Cubed
- 1 Zucchini, Sliced
- 1/2 heads Cabbage Chopped
- 1 package Frozen Turkey Meatballs (14 Oz Package)
- 2 Tablespoons Cilantro, Chopped
- Coarse Sea Salt And Freshly Ground Pepper
- Heat olive oil in a deep pot over medium heat then add onion, garlic and carrots. Saute until golden brown. Add canned diced tomatoes, beef broth, tomato paste and potatoes. Bring to a boil then add zucchini, cabbage and turkey meatballs.
- Simmer for about 15 minutes or until potatoes are cooked. Add fresh chopped cilantro and stir into soup.
- Season with salt and pepper to taste.
