Citrus Shrimp And Avocado Salad
- FOR THE SALAD:
- 12 whole Shrimp, Peeled And Deveined
- 1 Tablespoon Lemon Pepper
- 1 teaspoon Salt
- 1 whole Head Of Romaine Lettuce, Chopped
- 1 cup Mache Lettuce
- 1 whole Avocado, diced
- 1 whole Grapefruit, Supremed
- 1 whole Navel Orange, Supremed
- 1 whole Radish, Thinly Sliced
- FOR THE DRESSING:
- 3 Tablespoons Fresh Lemon Juice
- 1/4 cups Fresh Orange Juice
- 1 teaspoon Honey
- 1-1/2 teaspoon Dijon Mustard
- 1-1/4 teaspoon Salt
- 1/4 teaspoons Pepper
- 1/4 teaspoons Salt
- Season shrimp with lemon pepper and salt. Saute for 3-4 minutes on medium low heat until cooked through. Let cool
- Use an immersion blender or whisk to combine the dressing ingredients.
- Toss lettuce, shrimp, avocado and fruit together with dressing and serve.
