Oatmeal White Chocolate Strawberry Cookies

  1. In a mixing bowl, cream butter, sugar, and yogurt. Add vanilla. Next add in one egg at a time and beat until full mixed.
  2. In a large bowl, mix flour, oats, salt, baking powder, and baking soda together. Gradually add the flour mixture to the wet mixture and stir well.
  3. Gently fold in strawberries and chocolate chips. Add nuts last. Mix until fully combined. Cover the dough with plastic wrap and chill in the fridge for at least 1 hour. This will ensure the cookies will be fluffy.
  4. Once chilled, remove dough from fridge. Preheat oven to 350u0b0F and grease a baking sheet with nonstick cooking spray. Scoop about 1 tablespoon of dough onto the sheet, about 1/2 inch from each other.
  5. Bake for 8-10 minutes, or until cookies are golden brown. Remove from the oven and let cool on a wire cooling rack. Drizzle with white chocolate if desired.
