Confetti Quinoa Salad With Lime Vinaigrette
- 2 cups Cooked Quinoa, Cooled
- 1 can (14.5 Oz. Size) Black Beans, Drained And Rinsed.
- 1/2 whole Red Bell Pepper, Diced
- 1 whole Mango, Diced
- 1 whole Avocado, diced
- 1 whole Green Onion, Diced
- 1/4 cups Cilantro, Minced
- 3 Tablespoons Fresh Lime Juice
- 1 Tablespoon Red Wine Vinegar
- 1 Tablespoon Olive Oil
- 1/4 teaspoons Salt, Or To Taste
- 1/4 teaspoons Black Pepper, Or To Taste
- In a large bowl, combine quinoa, beans, bell pepper, mango, avocado, green onion, and cilantro. In a small bowl, whisk together lime juice, vinegar, olive oil, salt and pepper. Pour dressing over quinoa salad and toss to coat.
- Chill until ready to serve.
