Easy Chocolate Zucchini Cake
- 1 cup Sugar Substitute
- 3/4 cups Sugar
- 1/2 cups Light Sour Cream Or Non-fat Plain Yogurt
- 2 Eggs, Lightly Beaten
- 2/3 cups Unsweetened Applesauce
- 1 teaspoon Vanilla Extract
- 2-1/2 cups Unbleached All-purpose Flour
- 1/2 cups Unsweetened Baking Cocoa
- 1 teaspoon Baking Soda
- 1/2 teaspoons Salt
- 1/2 cups Low-fat Buttermilk
- 2-1/4 cups Shredded Zucchini
- Mini Chocolate Chips For Sprinkling, Optional
- 1. Preheat oven to 350u0b0F. Grease a 9x13 baking pan.
- 2. In a large mixing bowl, beat sugar substitute, sugar, and sour cream on medium speed for 1 minute. Add eggs, applesauce, and vanilla; beat 1 minute longer.
- 3. Combine the flour, baking cocoa, baking soda, and salt. Add to sugar mixture alternately with buttermilk, beating just until blended. Stir in zucchini.
- 4. Transfer to pan. Bake for 20 minutes. Sprinkle with chocolate chips. Bake 10-15 minutes longer or until toothpick inserted near the center comes out clean. Cool on wire rack.
