Granola Berry Crisp
- FOR THE CRISP:
- 1-1/2 cup VitaSpelt Maple Granola Or Granola Of Choice
- 1 Tablespoon Coconut Oil
- 2 Tablespoons Xylitol
- FOR THE FILLING:
- 4 cups Mixed Frozen Berries Of Choice
- 1 Tablespoon Lemon Juice
- 1/2 cups Powdered Honey
- 1 teaspoon Pure Vanilla Extract
- 3 Tablespoons Spelt Flour
- 1/8 teaspoons Pink Salt
- Preheat the oven to 350 F.
- In a large bowl, combine the mixed berries, lemon juice, powdered honey and vanilla. Add the flour and salt and mix until well coated. Pour into a 9-inch round or 9-inch square baking dish. Set aside.
- In a separate small dish, combine the granola, oil and xylitol. Top the fruit mixture with the granola mixture.
- Bake covered for 20 minutes. Remove cover and bake for an additional 7-8 minutes. Serve warm with your favorite ice cream!
