Banana Cake With Cinnamon Cream Cheese Icing
- FOR THE CAKE:
- 6 ounces, weight Plain Flour
- 5-1/3 ounces, weight Granulated Sugar
- 1/2 teaspoons Baking Powder
- 1/2 teaspoons Bicarbonate Of Soda
- 1/4 teaspoons Salt
- 4 Tablespoons Sour Cream
- 5 tablespoons, 1 teaspoon, 3-3/4 pinches Oil
- 1 whole Egg
- 7 ounces, weight Banana, Mashed (approximately 2 Bananas)
- FOR THE ICING:
- 3-5/8 ounces, weight Cream Cheese
- 3-5/8 ounces, weight Icing Sugar
- 1/2 teaspoons Ground Cinnamon
- Preheat the oven to 180u0b0C (Gas Mark 4 / 350u0b0F).
- Add all the cake ingredients to a large mixing bowl, and beat until well combined. Pour mixture into a buttered baking dish, and spread around into an even layer.
- Bake for 25 minutes, or until a knife or toothpick inserted into the middle comes out clean. Set aside to cool.
- Meanwhile, mix the icing ingredients and spread over the cake once it is fully cooled. Cut into bars.
