Crockpot Vegetable Fagioli Soup
- 2 Tablespoons Onion, Chopped
- 1/4 cups Orange Pepper, Chopped
- 1/4 cups Green Pepper, Choppped
- 1/4 cups Carrots, Chopped Or Sliced
- 2 cloves Garlic, Minced
- 2 cans (14 1/2 Oz. Size) Diced Tomatoes
- 1 can (15 Oz. Size) Red Kidney Beans With Juice
- 1 can (15 Oz. Size) Great Northern Beans With Juice
- 1 Tablespoon White Vinegar
- 1 cup Chicken Broth
- 1 teaspoon Dried Oregano
- 1 teaspoon Dried Basil
- 1/2 teaspoons Dried Thyme
- 1/2 teaspoons Black Pepper
- 1-1/2 teaspoon Salt
- 3/4 cups Ditali Pasta, Uncooked
- Combine all the ingredients in a crockpot except for the pasta (this will be added later). Put the lid on and cook on high for 3 hours. Then reduce to low and cook for 1 to 2 more hours. In the last 30 minutes of cooking time add pasta.
