Barbecue Pulled Chicken Chili
- 1/2 whole Yellow Onion, Finely Chopped
- 2 teaspoons Grapeseed Oil
- 4 cloves Garlic, Minced
- 2 whole Jalapenos Seeded And Chopped
- 1 whole Chicken Breast
- 1 can (14 1/2 Oz. Size) Diced Tomatoes
- 1 can (15 Oz. Size) Garbanzo Beans
- 1 cup Chicken Broth
- 3 Tablespoons Barbecue Sauce
- 1 Tablespoon Chili Powder
- 1 teaspoon Salt, Or To Taste
- Saute the onion in oil on medium heat until soft, about 3 minutes. Add the garlic and jalapeno. Saute an additional 3 minutes then transfer to a crockpot. Add the remaining ingredients, including the chicken breast, to the crockpot.
- Cook on low for 6 hours. Remove chicken from the crockpot, shred with a fork and put the chicken back in the crockpot. Mix it in, then serve!
