Banana Nutella Muffins
- 1/4 cups Unsweetened Applesauce
- 1/4 cups Sugar
- 1/4 cups Butter, Softened
- 2 whole Large Eggs
- 3 whole Ripe Bananas, Mashed
- 1/2 cups Light Sour Cream
- 1 teaspoon Vanilla
- 2-1/2 cups Whole Wheat Flour
- 1 teaspoon Baking Soda
- 1/4 teaspoons Kosher Salt
- 1 teaspoon Cinnamon
- 1/2 cups Nutella
- Preheat oven to 350u0b0F.
- Using an electric mixer, cream together applesauce, sugar, and butter on medium speed until well blended, about 1 minute. Add the eggs, one at a time, beating well after each addition. Add mashed bananas, sour cream, and vanilla. Beat on low speed until blended, about 30 seconds. With a wooden spoon, stir in flour baking soda, salt, and cinnamon just until moistened and the flour has disappeared. Finally, swirl in the Nutella. Scoop batter into lined muffin tins.
- Bake 22-24 minutes, until lightly browned and until the muffin springs back when gently pressed on top. Cool 10 minutes before removing to a wire rack. Makes 24 muffins.
